Nourishing Pumpkin Soup

A simple, comforting soup made with pumpkin, coconut milk, fresh ginger, garlic, onion, and nourishing chicken bone broth or meat stock. It’s creamy, gently spiced, and full of flavour — perfect for warming the body and supporting digestion. A go-to recipe for postpartum or anytime you need a nourishing bowl of comfort.

 

Nourishing pumpkin soup

INGREDIENTS

  • Ghee for frying

  • 1 whole crown pumpkin

  • 5 cloves of garlic

  • 1 brown onion

  • 1” piece of fresh ginger

  • 2 cups of chicken bone broth or chicken meat stock

  • 2 cups of water (or use more bone broth/ meat stock)

  • 1 400g can of organic coconut milk

  • 1-2 tsp desiccated beef liver powder (optional nutrient boost)

METHOD

  1. Melt the ghee in a heavy-based pot. Roughly chop the garlic, onion and ginger before adding them to the pot. Saute until soft.

  2. Roughly chop the pumpkin and add this to the pot.

  3. Add the bone broth or meat stock, water (if using), coconut milk and the liver powder.

  4. Simmer until the pumpkin is soft, and blend using a stick or immersion blender.

  5. Season to taste.

  6. Tip: I love to serve this with a source of quality protein, such as pastured chicken or fish and some fresh herbs for a balanced and nourishing meal.
