Vanilla Custard With Stewed Fruit

INGREDIENTS
4 pasture-raised egg yolks
400ml can of organic coconut milk or cream
1 tbsp pure maple syrup
1 tsp pure vanilla powder or vanilla bean paste
1.5 tbsp gelatin bloomed in 1/4 cup water
METHOD
Add the egg yolks, maple syrup and vanilla to a small jug or bowl.
Gently heat the cream or coconut milk in a small saucepan until lightly simmering.
Slowly pour around half of the cream into the mixture with the egg yolks and whisk continuously.
Pour the combined mixture back into the saucepan, adding the bloomed gelatin and continue whisking for around 5 minutes until the gelatin has dissolved.
Strain through a fine mesh sieve before pouring into individual ramekins or a portioned silicone tray.
Place in the fridge to set for 2-3 hours.
Serve with seasonal stewed fruit.
